Easy Paneer Jalfrezi

Stir fried paneer with cumin, chilli, ginger and peppers

I’m back on Jamie’s Food Tube sharing my recipe for Paneer Jalfrezi. One of the recipes that is perfect for a mid week meal using simple ingredients but is so very tasty! Paneer is Indian cottage cheese that’s a versatile vegetarian option and absorbs spices to flavour curries really well and cooks very quickly.

Shop bought paneer is available in all supermarkets although I have also shared my recipe for a delicious homemade variety. Definitely worth a try! Serve this jalfrezi with flaky parathas and some raita as well. The full recipe is below;

Method

  1. Heat oil in a large heavy bottom sauce pan over a medium heat. Add cumin seeds and sizzle for 30 seconds. Add the onions and fry for 8-10 minutes. As they begin to soften add the garlic and fry for a few seconds. Add all the spice powders and stir for a further minute. If the spices stick to the base of the pan add a splash of water.

  2. Now add the peppers and mix with all the spices for 4-5 minutes. Add the tomatoes at this stage and cook until slightly softened

  3. Now add the paneer cubes and stir well to coat with all the spices. Cook for a couple of minutes, season to taste. Add the ginger, lemon juice & garnish with fresh coriander. Serve warm with naan or chapatti.
