How to cook perfect rice on the Pool!

And a recipe for Keralan Chicken Biryani...

One of the most common questions I am always asked is how to cook the perfect rice? The key lies in the proportion of rice to water. Times and techniques of cooking, play a crucial role in making sure you are left with grains that are separated grains. Quality of rice is imperative and of course using a long grain variety such as basmati will yield a gorgeous pot of fluffy rice that soaks up the goodness of a flavoursome curry.

I share my fool proof recipe for cooking rice on The Pool along with a recipe for South Indian Chicken Biryani from my cookbook Indian Kitchen. Biryani is definitely one to try on a leisurely weekend and this is my go to recipe for stunning flavours of coconut, curry leaves and black pepper.
