Elated to see my first ever published recipe out in Catherine Phipps book ‘The Pressure Cooker Cookbook’ published by Ebury Press. Catherine is a columnist for the Guardian’s Word of Mouth food pages and a very talented food writer. I have long been a fan of her recipes on the blog Read’s, Cook’s and Eats’.
The Pressure Cooker Cookbook is a ‘must have’ for meal in minutes with a definitive guide to cooking with modern day pressure cookers; over 150 recipes showcasing the versatility of this economical kitchen gadget. My recipe for Parsi style chicken & cashew nut (Parsi Kaju na Murghi) curry graces the pages of this beautiful cook book. With my pressure cooker at the ready I can’t wait to try some of Catherine’s recipes. Top of my list is the Chinese spare ribs cooked in 15mins, Moroccan Harira and also a gorgeous Pear & ginger jam.
Pressure cookers are a vital part of India kitchens with more home cooks across cities in India using them for every meal. It’s something I watched my mum use every day in our household in India for cooking lentils, meats and even frying. It’s quite the trend in the UK/ US which I reckon is here to stay.
