Eating, exploring spices

and travelling my way around India & Thailand

I have spent the last month travelling extensively. My visit to Delhi was filled with good food and of course spices galore. Including trips to Old Delhi to explore some real gems of places for Indian street food, spice markets and also how they are sold across different cities in India. I had the opportunity to check out some locally made pickles and also find out about the process of it all from start to finish. There are so many fantastic Indian restaurants dotted across the capital and I have savoured each and every one of those meals. They have inspired me to share some classic Indian recipes using the diversity of spices in our food with clients and at my cookery events.

Also on the cards was a trip across the coastal islands of Thailand, which has been an eye opener in how spices and flavours are used in Thai cuisine and also the diversity in regional Thai food which is so similar to the Indian culture. Simple ingredients that play a pivotal part in bringing out so much flavour is the mantra in Asian cooking.
