Roasting coriander seeds in a dry pan on low heat brings out the best flavour. The seeds gives a warm depth to dishes with lemony citrus notes. The seeds are used whole in pickles and chutney. They are also crushed to a powdered form in curries and even to make spice blends such as garam masala.
